Add a fresh kick to this basic side by warming your black beans in coconut oil and zesting in some lime.  While it may seem simple, this quick and delicious side adds a level of freshness to any meal!

Yummy Plant-Based Mac N Cheese

Coconut and Lime Black Beans

A fresh citrus flavor paired with the sweetness of coconut oil and richness of black beans will be sure to please any crowd.  Takes less than 5 minutes to make and is only three simple ingredients.

INGREDIENTS
  • 1 – 15 oz can of low sodium black beans (rinsed)

  • 2 tbsp unrefined virgin coconut oil

  • the zest of one lime

  • pink Himalayan rock salt and black pepper (to taste, you can use whatever kind of salt you have)

GUIDE / INSTRUCTIONS
  • In a medium non-stick skillet, melt the coconut oil.

  • Once melted add the rinsed beans and lime zest and warm through for about 4-5 minutes over medium low heat.

  • Season with salt and pepper, serve!

TIPS & TRICKS FOR THIS RECIPE:

– You can make this dish with dried black beans – it will take about two hours for the black beans to cook.  If you have the time, it will produce a better textured dish with a deeper color.  But if you are like me and time is off the essence, canned is absolutely perfect.

– We rinse canned beans to wash away the extra starch and salt.  This will produce a better texture and flavor in the dish.  Rinse till the water runs clear.

– When available, always buy the low sodium variety of any bean.  This will allow you to better control the salt in your final dish.

– Great along side something like mushroom tacos (wink, wink), or you can use in a Mexican style bowl or taco salad.
