Mexican Quinoa
The additions of saute bell pepper elevate this side dish to the next level. You can use a rice cooker to make things simple or cook directly on the stove top, either way this is a quick and easy side dish with big flavor.

INGREDIENTS
2 cups of veggie stock or water (plus ¼ cup if using a rice cooker)
1 cup of quinoa (rinsed)
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 tbsp avocado oil (or any light oil for high heat)
2 tsp of cumin
½ tsp of coriander
½ tsp of garlic granules (can use garlic powder)
½ tsp dried oregano
pink Himalayan rock salt and black pepper (to taste, you can use whatever kind of salt you have)
GUIDE / INSTRUCTIONS
Place the veggie stock, rinsed quinoa, spices, salt and pepper into the rice cooker and start the cooker.
In a medium non-stick skillet, heat up the avocado oil over high heat.
Saute the chopped bell peppers for 4-5 minutes till soften and caramelized. Season with salt and pepper and add to the rice cooker.
Add the veggie stock, bring to a boil and reduce to a simmer till the sauce reduces. Should take about 3-5 minutes.
The quinoa should only take about 15 minutes to cook after the water starts to boil.
Serve!
TIPS & TRICKS FOR THIS RECIPE:
– If cooking on the stove top, place ingredients from step one into a medium saucepan and bring to a boil. Add the sauteed bell peppers and reduce the heat to a simmer, cook for 15 minutes or till tender.
– You always want to rinse your quinoa before you use it as it removes all the fine nature coating that can often make quinoa taste bitter or soapy.
– You can easily swap out the quinoa for any other grain such as brown rice, millet, bulgur or whatever you have in the pantry. Just follow the cooking directions and add the seasonings from this recipe.
– Great along side something like mushroom tacos (wink, wink), or you can use as the base for a Buddha style bowl or taco salad.
