Taco Tuesday Time! One of my favorite recipes I have ever written.  These delicious tacos are super simple to make and are packed with big flavor!  Pair it with our Mexican quinoa and you have yourself an awesome meal any night of the week.

Yummy Plant-Based Mac N Cheese

Mushroom Tacos

Chock full of big flavors, these delicious mushie tacos are perfect for any occasion.  The fixings list is endless: romaine lettuce, fresh tomatoes, nutritional yeast (for that cheese flavor), plant-based cheese, shredded red cabbage, chipotle sour cream or avocado creme! You can also use the mushie mix in taco bowls, taquitos, or even my new favorite – mini tacos! Enjoy.

INGREDIENTS
  • 16 oz of cremini mushrooms – stems removed and cut into a small dice.

  • 2 tsp of chopped garlic

  • 2 tsp of cumin

  • ¾ tsp of coriander

  • ½ tsp of onion powder

  • ¼ tsp of chipotle powder (can add more for spice)

  • ½ tsp of dried oregano

  • ½ cup of veggie stock (or mushroom stock)

  • 2 tbsp of avocado oil (or another light oil for high heat cooking)

  • pink Himalayan rock salt and black pepper (to taste, you can use whatever kind of salt you have)

  • Plant-based flour or corn tortillas

GUIDE / INSTRUCTIONS
  • Heat the avocado oil in a large nonstick skillet over high heat.

  • Saute the mushies to release their moisture and caramelize for 3-5 minutes.  (be sure not to overcrowd the pan – do it in batches if you don’t have a skillet large enough to do in one batch)

  • Add the garlic and spices to the skillet and toast the spices along with the mushrooms for 2-3 minutes (if you did mushies in batches – time to add everyone back into the pool).

  • Add the veggie stock, bring to a boil and reduce to a simmer till the sauce reduces.  Should take about 3-5 minutes.

  • Season with salt and pepper to taste and serve however you choose.

TIPS & TRICKS FOR THIS RECIPE:

– You can easily use black beans in lieu of mushrooms for this dish.

– You can add nutritional yeast to the mushie mix to add an additional cheesy flavor.  Just add a bit more stock to keep the sauce the same consistency.

– If you want to make the tacos more spicy, add more chipotle powder or even some diced green chiles.

– This recipe is best with cremini mushrooms as they have more flavor and a better texture, but you can use button/white mushroom if those are more easily available.
